You can use normal Chameleon themeing methods, but the header style is shared between HeaderCtrl, ArrayCtrl and GridCtrl, so you need to create or edit a HeaderCtrl::Style.

HeaderCtrl::Style& s = HeaderCtrl::StyleDefault().Write();
// use s
